Magic Weight Loss Apple Pie. Delicious!

Apple Pie

This light apple pie tastes nothing like diet food. It's got all the decadence without the guilt.
 
Ingredients
1 1/2 cups rolled oats
2 tbsp. wheat germ
2 pkg. artificial sweetener
2 tbsp. melted soft, light margarine
2 tsp. baking powder
2/3 cup (5 oz.) fat-free vanilla yogurt
2 medium sweet apples
1/2 cup unsweetened applesauce
1/2 tsp. cinnamon



Preheat oven to 375°F. Mix rolled oats, wheat germ, one package of artificial sweetener, margarine, baking powder, and vanilla yogurt. Let stand for one hour. Spray a spring form pan with nonstick, fat-free cooking spray. Spread oat batter ¼ inch thick in pan. Peel, core, and thinly slice apples. Cover oat batter with a layer of apple and two tablespoons of applesauce. Sprinkle with cinnamon. Repeat layering until all apples and sauce are used. Sprinkle remaining artificial sweetener on apples. Bake until golden brown.
Serves six. One serving equals 1/2 fruit, 1 starch, 1 fat, 1/8 dairy.

Spaghetti Dinner

This rich, tangy sauce with pasta makes a healthy meal that is sure to please all. Who said you had to diet to lose weight?

Ingredients
12 oz. ground chicken or beef
¼ cup mushrooms, sliced
¼ cup onion, chopped
¼ cup green pepper, chopped
1 garlic clove, minced
2 cups plum tomatoes, cubed
½ tsp. artificial sweetener
½ tsp. oregano
¼ tsp. thyme
½ tsp. basil
1 bay leaf
¼ tsp. black pepper
3 cups cooked spaghetti
¾ cup (6 oz.) shredded mozzarella cheese (optional)



Brown chicken/beef along with mushrooms, onion, green pepper, and garlic in a skillet. Stir in tomatoes, sweetener, and seasonings. Bring to a boil and reduce heat. Cover and simmer for 30 minutes. Uncover and simmer another 10-15 minutes or until it reaches desired consistency, stirring occasionally. Discard bay leaf. Serve over a ½ cup of spaghetti and sprinkle each serving with 1 oz. grated mozzarella, if desired.
Serves six. One serving equals ½ protein, ½ vegetable, 1 starch, and 1 dairy (if cheese used).

Strawberry banana is my favorite flavor combination in all of life, so I’m really excited about this smoothie. Making it is simplicity itself. Cut up a banana, toss in some strawberries, add an orange for flavor, your yogurt, your ice, and voila! That’s all you have to do!
Recipe:
1 cup of strawberries
1 banana
1/2 cup of low-fat yogurt or milk
5 ice cubes
1/2 of a sliced orange

Magic Weight Loss Roasted Cherry Tomato Soup

Serves 3

500g cherry tomatoes on the vine
1 tbsp olive oil
1 tsp grated lemon zest
Sea salt
500g vegetable stock
1 tbsp tomato paste
1/2 tbsp capers, chopped
1 spring onion, finely sliced 
Preheat the oven to 230°C/450°F/gas 8.

 

METHOD

  1. Place the tomatoes in one layer on a baking sheet. Drizzle 1 tablespoon olive oil onto the tomatoes and the same of balsamic vinegar, some lemon zest and a little sea salt. Roast for about 20 minutes until the tomatoes are bursting and very soft.
  2. Remove the tomatoes from the vines and add to a blender with hot stock and tomato paste. Blend until smooth.
  3. To make the salsa, chop the remaining cherry tomatoes into irregular quarters and mix with chopped capers and finely sliced spring onion. Serve with seeded flat breads.

This aromatic green curry soup is packed with spinach, mushrooms, green beans and broccoli stems (save the florets for another night). Green curry paste gives this soup a delicately spicy broth. The vegetables are cooked just enough to be tender, but retain their freshness and distinct textures.

Ingredients

  • 2 medium yellow onions
  • 2 tablespoons plus 2 teaspoons extra-virgin olive oil, divided
  • 1/2 teaspoon salt, divided
  • 2 tablespoons Thai green curry paste (see Notes)
  • 4-5 cups vegetable broth, store-bought or homemade
  • 8 cups gently packed spinach (about 6 ounces), any tough stems trimmed, divided
  • 2 cups water
  • 2 1/2 cups oyster or shiitake mushrooms (about 4 ounces), trimmed
  • 2 large cloves garlic, chopped
  • 1 1/2 cups 1-inch pieces trimmed green beans
  • 1 cup thinly sliced peeled broccoli stems
  • 5 scallions, sliced
  • 1 tablespoon finely chopped lemongrass (see Notes)
  • 1 cup chopped fresh cilantro
  • 1 serrano chile, finely chopped
  • 2 tablespoons fresh lemon juice, or more to taste.

Preparation

  1. Quarter onions lengthwise, then thinly slice crosswise. Heat 2 tablespoons oil in a soup pot or Dutch oven over medium-high heat. Add the onions and 1/4 teaspoon salt; cook, stirring frequently, until the onions are soft and beginning to brown, 6 to 8 minutes. Stir in green curry paste and cook, stirring, for 3 minutes. Stir in 4 cups broth; bring to a gentle simmer.
  2. Meanwhile, coarsely chop 4 cups spinach. Combine the remaining 4 cups spinach with water in a blender; puree until the spinach is chopped to confetti. Cut mushrooms into 1/4-inch strips.
  3. Heat the remaining 2 teaspoons oil in a large skillet over medium heat. Add garlic and cook, stirring until fragrant, about 30 seconds. Add the mushrooms and cook, stirring, until the liquid cooks away and the mushrooms begin to color, 4 to 6 minutes.
  4. Stir the mushroom mixture and green beans into the pot; return to a simmer and cook for 5 minutes. Stir in broccoli stems, scallions and lemongrass; return to a simmer and cook for 3 minutes more. Stir in the chopped and pureed spinach, cilantro and a big pinch of serrano. Return to a simmer, cover and cook just long enough to wilt the spinach, about 1 minute. Add up to 1 cup additional broth if a thinner consistency is desired. Add lemon juice; taste and add more salt, serrano and/or lemon juice, if desired.

Tips & Notes

  • Notes: Look for prepared green curry paste—a fiery mixture of green chiles and Thai seasonings—in the Asian section of large supermarkets. The heat and salt level can vary widely depending on brand. Be sure to taste as you go; if you like your curry very spicy, you can turn up the heat by using a little more fresh serrano chile.
  • Look for lemongrass—a woody, scallion-shaped herb with an aromatic lemon flavor—in the produce department of well-stocked supermarkets. To use, trim off the root end and grassy top. Peel off the woody outer leaves. Thinly slice the softer inner stalk, then finely chop.
